Go Bananas for Guilt-free Ice Cream


I came across this post a little while ago that said you could create 'ice cream' from plain old frozen bananas.  I found the idea intriguing and bookmarked the site.

Last night my baby girl had a fever and I thought it might be a perfect time to test out whether bananas could be a delicious (healthy) cold treat.


Well, after destroying my Kitchen Aid blender (oh boo!) because I didn't cut up the 2 frozen bananas before I put them in, I was eventually able to use my little magic bullet to puree them.  The result.... amazing.  I was so impressed.  The flavour is subtley banana and the texture is divine - soft, creamy and smooth.  As a warning - it melts REALLY quickly after it's blended so either you have to eat it right away or put it back in the freezer.

After the first batch I tried a second batch adding a single-serving vanilla yogurt with one banana.  I probably wouldn't do that again - it just tasted like vanilla yogurt mixed with the frozen banana.  But then I added teaspoon (from the drawer) of cocoa to half of the vanilla yogurt/banana mixture and then put it in the freezer to firm it up.  I bathed the kids & put them to bed and then came back for the chocolate version.  A-M-A-Z-I-N-G!  Rich and chocolatey - if I hadn't made it myself I never would have guessed it was made from bananas.



This would be delicious served with toasted almonds, marshmallows, fresh fruit... anything really!
