Adventures in Baking: One Bowl Chocolate Chip Banana Bread
One of my sisters stopped in for a visit yesterday afternoon and I always like to have something for people to nibble on when they come over.
I didn't have a lot of time so I fell back on one of my favourite quick and yummy recipes - Chocolate Chip Banana Bread. No beater necessary, mix it all in one bowl and then pop it into the over for app. 55 min. Perfect.
It's moist and delicious with a perfect balance of banana and chocolate.
Ingredients
3 or 4 over-ripe bananas, mashed (keep frozen bananas in your freezer and then thaw as needed by putting them in the microwave for app. 1 min)
1/3 cup melted butter
3/4 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
Rounded 1/2 cup semi-sweet chocolate chips
Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in.
Add the flour last and mix until almost incorporated. Then add the chocolate chips and mix until they're through the batter.
Pour mixture into a buttered 4x8 inch loaf pan. Bake for 50 min - 1 hour (be careful to not overbake otherwise it loses its moistness). Let it cool inside the pan.

This looks delicious Jacs. I would probably just substitute half the flour with whole wheat flour. I will try it and let you know how it turns out:)
