My Healthy Creamsicle Smoothie

I bought a bike trailer on Craigslist a couple weeks ago so that my little ones and I can go on bike rides together.  We were out for an hour on Sunday and when we got home I was hungry, thirsty and craving something citrus-y.

Last night the craving was still there so after my workout I decided to see if I could re-create the deliciousness of a Creamsicle but without any of the guilt :)  I have to say I'm pretty happy with the result!  It's thick and orange-y and creamy.  YUM.

Creamsicle Smoothie

1 navel orange quartered with the skin cut off completely (cut off all the pith - the white stuff under the peel - and remove the thick white piece that runs through the centre of the orange)
1 individual serving vanilla yogurt (single serving = app. 1/3 C) - or 3 heaping tablespoons
1 very heaping tablespoon Orange Metamucil (this may seem odd, but it's critical for the flavour, it also adds thickness to the smoothie and it's a great source of fibre!)
6 slices frozen peaches (if you don't have frozen peaches, you can use 2-3 ice cubes instead)
1 scoop protein powder (optional)
1/2 - 1 cup milk (adjust based on your preference)

Blend all ingredient together until smooth.

Note: Because you're using a whole orange, there are 'bits' in the smoothie.  If you don't like bits - you can substitute orange juice (I'd guess around 1/2 - 3/4 cup) or you can peel the individual segments of the orange once the rind and pith has been removed so that only the flesh of the fruit goes into the smoothie.  Also, if it's doesn't have enough orange flavour, add some more Metamucil.

Enjoy!

  4. Sounds great! I will try it and strain it through a sieve so I don't have any extra "bits".
    Thanks for the recipe:)

  5. Ker - I don't think it will go through a sieve! it's too thick... if the bits are a big turn off for you, maybe try with just juice and see if you like it :)
